Good question!
Microgreens are basically young vegetables that are picked before they’ve matured – think baby broccoli and baby radishes. To grow our microgreens we use the seedlings of edible veggies and herbs and pick them just after the cotyledon stage of growth.
Unlike sprouts that are grown in water, our microgreens are grown in soil and watered just like you would a ‘grown up vegetable’. On average, it takes about 7 – 10 days to grow microgreens enough to harvest and eat. Making them a super efficient green to grow!
Why do we love them?
Another good question. Not only are microgreens aromatic and flavourful, they’re also incredibly high in all sorts of nutrients, minerals, vitamins and antioxidants. Everything from vitamins A, C, E, and K to collagen boosters, polyphenols, sulforaphane and bioactive components.
Microgreens are considered ‘superfoods’ thanks to studies that show they have exceptional anti-inflammatory and even anti-cancer properties. They also contain up to 40 times more nutrients than their mature counterpart vegetables – so you’re better off reaching for a punnet of broccoli microgreens rather than a grown head of brocc next time you shop!
2 cups Microgreens (Sunflower shoots provide a nice neutral taste, where as Radish would add a subtle peppery flavour. You can always use a mix of any microgreens you have)
Mix this superfood pesto through pasta, add to bruschetta, on top of grilled vegetables and salads or simply enjoy it on a piece of toast with a poached egg and avocado!
